To coordinate bakery operations across assigned stores to ensure product availability, consistent quality, effective production planning and excellent merchandising standards. The role drives sales, manages waste and stock levels, monitors margins and ensures compliance with food safety and hygiene standards. Working closely with Bakery Managers and store management, the Co-ordinator supports staff development, training and performance management, conducts store visits and operational audits; identifies opportunities to improve profitability, efficiency and the overall customer experience.Minimum Requirements:
Grade 12 or equivalent qualification and Qualified Baker certification
Retail Management Diploma or related qualification (advantageous).
Minimum 5 years’ experience in Bakery Management within a retail or similar environment.
In-depth knowledge of bakery processes, production planning and operational procedures.
Strong understanding of retail bakery operations, including product availability, merchandising, quality control and stock management.
Proficiency in Microsoft Excel for reporting, data analysis and operational tracking.
Extensive knowledge of food safety, hygiene, and stock rotation principles.
Experience working with SAP or similar retail management systems.
Valid driver’s license and willingness to travel between stores.

Key Responsibilities:
Operational Coordination
Coordinate and support bakery operations across approximately 20 assigned stores.
Ensure consistent availability of core bakery lines and promotional products.
Monitor and guide daily production planning to align with customer demand and sales targets.
Support Bakery Managers in maintaining efficient production processes and operational consistency across stores.
Product Availability & Merchandising
Drive availability and presentation of key bakery ranges in line with company merchandising standards.
Ensure promotional lines and focus products are executed effectively in stores.
Monitor in-store displays, product freshness and range assortment to improve the customer offering.
Ensure stores maintain strong visual merchandising standards within the bakery department
.
Quality, Food Safety & Compliance
Ensure compliance with food safety regulations, hygiene standards and company policies.
Monitor adherence to recipe manuals, portion control standards and production guidelines.
Conduct operational audits to ensure quality and product consistency across stores.
Address quality or compliance issues and implement corrective actions where required.
Financial Performance & Cost Control
Monitor and analyse sales performance, margins, waste and stock levels.
Support stores in improving profitability through cost management and waste reduction initiatives.
Guide Bakery Managers on selling price management and margin optimisation.
Review store performance data to identify opportunities for improvement.
Stock & Inventory Management
Monitor stock levels and ordering processes to ensure product availability.
Support stores in maintaining accurate stock control and stock take processes.
Ensure appropriate management of raw materials, packaging and operational supplies.
Team Support, Training & Capability Building
Support Bakery Managers with staffing, recruitment and onboarding within the bakery department.
Provide training, coaching and mentoring to bakery teams to improve operational capability.
Assist with performance management and development of bakery staff.
Promote a culture of customer service, teamwork and operational excellence.
Store Performance Monitoring & Reporting
Conduct regular store visits to review operational performance and compliance with standards.
Provide structured feedback and action plans following store visits.
Monitor implementation of operational improvements and business initiatives.
Market & Competitor Analysis
Monitor competitor activity, pricing, product trends and promotions in the market.
Identify opportunities to improve product range, pricing strategies and customer offering.
Share insights and recommendations with store management and regional leadership.
Customer Experience
Ensure bakery departments deliver a high-quality customer experience through product availability, freshness and presentation.
Support stores in responding to customer feedback, complaints and service improvement opportunities.
Promote a customer-focused culture within bakery teams.
