Garder une constance dans la qualité de la recette mais aussi dans la méthode de fabrication ;
Organiser les mises en place complètes et le set-up de sa partie sous le contrôle du superviseur / manager ;
Gérer les besoins de sa mise en place et le réapprovisionnement en s’assurant que cela ne dépasse pas les besoins du service ;
Former, motiver, gérer la discipline et superviser le travail des commis de pâtisserie, s’assurant ainsi que tous les standards sont présents ;
Maintenir la pâtisserie et les équipements propres et prendre soin du matériel ;
S’assurer que tous les périssables sont conservés à une température appropriée ;
Noter les éventuels manques dans le stock ;
Ranger aux endroits appropriés les produits non utilisés ;
Couvrir et dater tous les périssables ;
Assister aux plans et actions de correction des problèmes de coût des aliments : contrôler le gaspillage des aliments, les pertes et les consommations ;
