The Role  

The Hygiene & Stewarding Manager is responsible for maintaining the highest standards of cleanliness, sanitation, and hygiene across all food production areas and public operational spaces within the hotel. 

This role leads the Stewarding team, oversees food safety and hygiene compliance, and works closely with Culinary, Food & Beverage, Housekeeping, and Engineering to ensure a safe, clean, and healthy environment for guests and team members. 

The successful candidate will champion a culture of cleanliness, food safety, and operational excellence, always ensuring compliance with hotel standards and local regulations. 

Duties, responsibilities and deliverables  

Stewarding Operations 

• Lead and develop the Stewarding team to ensure efficient daily operations. 

• Oversee cleaning, sanitation, and proper storage of kitchen equipment, utensils, and operating supplies. 

• Manage stewarding schedules, staffing levels, and productivity. 

• Maintain inventories of stewarding equipment and cleaning supplies. 

• Coordinate preventive maintenance and replacement of operating equipment. 

• Ensure stewarding practices align with 1 Hotels sustainability standards.

スチュワーディングオペレーション

・スチュワーディングチームを率い、メンバーの育成を通じて日々の業務が円滑に回る体制を築きます。

・厨房機器、調理器具、消耗品の洗浄・衛生管理・適切な保管を統括します。 ・シフト編成、人員配置、生産性の管理を担います。

・スチュワーディング関連機材および洗浄用品の在庫を管理します。

・稼働機器の予防保全および入れ替えのスケジュールを調整します。

・スチュワーディング業務が1 Hotelsのサステナビリティ基準に沿ったものとなるよう徹底します。
