The Role
This is a career-defining opportunity to lead the Australian debut of one of the world's most acclaimed luxury dining brands.
Opening at Crown Melbourne in 2027, Mott 32 Melbourne will bring internationally celebrated Chinese cuisine, exceptional design and world-class hospitality to one of Australia's premier dining destinations.
As General Manager, you will be entrusted with launching and leading this landmark venue, setting the standard for service excellence, operational performance and team culture from day one. Working closely with Crown leadership and Mott 32's global management team, you will oversee every aspect of the business, ensuring the successful delivery of a truly world-class guest experience.
This role requires a proven hospitality leader who thrives in luxury dining environments, has a passion for exceptional service and possesses the leadership capability to build, inspire and develop high-performing teams.
In this role you will:
Lead the successful pre-opening, launch and ongoing operation of Mott 32 Melbourne.
Establish a culture of service excellence, accountability and continuous improvement across the venue.
Deliver exceptional guest experiences that reflect the global reputation and standards of the Mott 32 brand.
Drive commercial performance through strategic planning, financial management and operational excellence.
Work closely with culinary leadership to ensure seamless collaboration between front and back-of-house operations.
Foster meaningful relationships with guests, key stakeholders, VIP patrons and industry partners.
Maintain the highest standards of quality, presentation, service and compliance across all aspects of the business.
Act as a visible and influential leader, creating an environment where team members can thrive and perform at their best.
About You:
You are a highly accomplished hospitality leader with a track record of delivering exceptional results within luxury restaurants, internationally renowned dining brands or premium hospitality environments.
You bring strong commercial acumen, outstanding people leadership skills and an unwavering commitment to creating extraordinary guest experiences.
Proven success in a General Manager, Venue Director, Director of Restaurants or senior hospitality leadership role.
Experience leading luxury, fine dining, Michelin-starred, premium hotel or internationally recognised restaurant operations.
Demonstrated success managing large and diverse teams while fostering a high-performance culture.
Strong financial and commercial management capability, including budgeting, forecasting and revenue optimisation.
Exceptional leadership, coaching and stakeholder management skills.
A passion for developing people and creating engaging workplace cultures.
The ability to perform in a fast-paced, high-profile environment while maintaining exceptional standards.
Experience in pre-opening hospitality projects will be highly regarded.
