The Role
Mott 32 Melbourne will bring internationally celebrated Chinese cuisine, exceptional design and world-class hospitality to one of Australia's premier dining destinations.
As Sous Chef, you will play a pivotal leadership role in the kitchen, supporting the Executive Chef in delivering exceptional culinary experiences that reflect the globally recognised standards of the Mott 32 brand. You will be instrumental in building and developing the culinary team, maintaining operational excellence and ensuring consistency across every dish served.
From pre-opening through to ongoing operations, you will help drive kitchen performance, foster a culture of excellence and contribute to the successful launch and long-term success of one of Melbourne's most anticipated restaurant openings.
This role requires a highly skilled and passionate culinary leader who thrives in premium dining environments and is committed to delivering exceptional food quality, team development and guest satisfaction.
In this role you will:
- Support the successful pre-opening, launch and ongoing operation of Mott 32 Melbourne.
- Assist the Executive Chef in leading day-to-day kitchen operations across all service periods.
- Maintain the highest standards of food quality, consistency, presentation and execution.
- Lead, mentor and develop culinary team members to build a high-performing kitchen culture.
- Ensure recipes, preparation techniques and plating standards are executed to brand expectations.
- Manage stock levels, ordering, inventory control and food cost performance within your area of responsibility.
- Collaborate closely with front-of-house teams to deliver seamless and memorable guest experiences.
- Maintain compliance with food safety, hygiene and workplace health and safety standards.
About You:
You are an accomplished culinary professional with experience in luxury restaurants, fine dining venues or premium hospitality environments. You are passionate about developing teams, maintaining exceptional standards and delivering unforgettable dining experiences.
- Proven success in a Sous Chef or senior culinary leadership role.
- Experience working within luxury restaurants, fine dining venues, premium hotels or internationally recognised hospitality brands.
- Strong knowledge of modern culinary techniques, kitchen operations and food safety standards.
- Demonstrated ability to lead, coach and develop culinary teams in a fast-paced environment.
- Experience managing ordering, stock control, food costs and kitchen efficiencies.
- Strong organisational skills with the ability to maintain exceptional standards under pressure.
- Excellent communication and stakeholder management skills.
- Experience within pre-opening hospitality projects will be highly regarded.
