The Role

This is a unique opportunity to shape the beverage experience for the Australian debut of one of the world's most acclaimed luxury dining brands.

As Bar Manager, you will be responsible for leading the beverage program and bar operations for this landmark venue. Reporting directly to the General Manager, you will play a critical role in creating an innovative and commercially successful beverage offering that complements Mott 32's globally recognised dining experience.

From pre-opening through to ongoing operations, you will oversee cocktail development, wine and beverage selection, inventory management, supplier relationships and team development, ensuring the venue remains at the forefront of luxury hospitality and mixology trends.

This role requires a passionate and experienced beverage professional with strong leadership capability, exceptional product knowledge and a commitment to delivering world-class guest experiences.

In this role you will:

• Lead the successful pre-opening, launch and ongoing operation of the Mott 32 bar program.
• Develop and deliver an innovative cocktail, spirits and non-alcoholic beverage offering aligned to the Mott 32 brand.
• Drive beverage quality, consistency and presentation standards across all service periods.
• Manage beverage purchasing, inventory control, stocktakes and relationships to optimise profitability and minimise wastage.
• Stay ahead of industry trends and evolving guest preferences to ensure the beverage program remains relevant, innovative and market-leading.
• Recruit, train, coach and develop a high-performing team of bartenders and beverage professionals.
• Collaborate closely with the General Manager and Executive Chef to create seamless food and beverage experiences.
• Maintain compliance with liquor licensing, food safety and responsible service requirements while upholding the highest operational standards.

About You:

You are an accomplished hospitality professional with a passion for luxury service, premium beverages and creating memorable guest experiences. You combine strong commercial acumen with creativity, leadership and a deep understanding of modern beverage trends.

• Proven success in a Bar Manager, Beverage Manager, or similar leadership role.
• Experience within luxury restaurants, fine dining venues, premium hotels or internationally recognised hospitality brands.
• Strong knowledge of cocktails, spirits, wine and contemporary beverage trends.
• Demonstrated experience managing ordering, inventory control, stock management and beverage cost performance.
• Exceptional leadership and team development skills, with the ability to build a positive and high-performing culture.
• Strong commercial awareness with a proven ability to drive revenue and optimise profitability.
• Excellent stakeholder management and guest engagement skills.
• Experience within pre-opening hospitality projects will be highly regarded.
