About the Role
Legends Global Hospitality operates select food and beverage offerings at WinStar World Casino and Resort. The Director of Food & Beverage leads the full F&B portfolio on property and is accountable for the people, the product, the process, and the performance of every outlet. This role reports to the General Manager and is held to the highest expectations for operational excellence. This is a leadership role first. We are looking for a hands-on, visible leader who builds trust and accountability with the team, sets a clear standard for food and beverage quality, and runs a disciplined operation.
The right candidate can design a premium guest experience while keeping value front and center for a wide range of guests, from casino patrons and sportsbook fans to resort guests, concert audiences and Grammy Award winning artists.
Outlets and venues: Cowboys Bar & Grill, Neon Pig, Lucas Oil Live, Winning Picks, Terrace View Cafe, Rotunda Bar, Cascades Pool, Terrace View Pool, In-Room Dining, and Spa.

WHAT YOU’LL DO (KEY RESPONSIBILITIES & OUTCOMES)
People Leadership & Employee Engagement
- Lead, coach, and develop a high-performing leadership team, setting clear expectations and holding leaders accountable with fairness and consistency.
- Be visible on the floor and in the kitchens across all shifts, building credibility with frontline team members and managers.
- Co-own employee engagement with HR through team meetings, recognition, and listening sessions, with action plans that have owners and dates.
- Track engagement and turnover by outlet, and work with HR on staffing, recruitment, training, succession planning, and labor compliance.
Back of House: Culinary, Quality & Food Safety
- Set, train, and enforce quality standards with culinary leadership, including menu development, recipe specifications, and outlet-to-outlet consistency, verified through regular tastings and line checks.
- Own food safety and sanitation across all outlets and back-of-house operations, with Legends Global Hospitality documented programs, daily checklists, and recurring internal audits.
- Maintain constant readiness for health department inspections, close corrective actions with clear owners and deadlines, and ensure certified food protection managers and ongoing team training in every outlet.
- Oversee stewarding, sanitation programs, and inventories.
Front of House: Guest Experience
- Design premium experiences in service, presentation, and hospitality, priced and portioned for clear value across the full range of guests, from everyday casino patrons to high-value players.
- Work with outlet leaders to ensure seamless execution across restaurants, bars, sports book dining, Lucas Oil Live, pools, in-room dining, and spa, including seasonal and peak-event operations.
- Lead beverage management across bars, lounges, pools, and venues, including beer, wine, spirits, and cocktail programs that fit each outlet’s identity, bar standards, pool, pour costs, and responsible service.
- Coordinate with WinStar entertainment, casino operations, and marketing on events, promotions, and comps.
- Champion guest feedback and service recovery, review results with outlet leaders, and act on recurring themes.
Fiscal Responsibility
- Build the budget and forecast with Finance, ensuring food and beverage costs, payroll, and overhead meet or exceed expectations.
- Analyze performance and report variances with data-driven recommendations, including regular P&L reviews for Legends and WinStar partners.
- Lead menu engineering and pricing to balance guest value with healthy margins, without compromising quality or safety, working with Finance and Procurement on inventory, vendor relations and cost controls.
Standards & Compliance
- Develop and audit SOPs across all outlets and ensure compliance with Legends and WinStar brand standards while partnering with Risk Management.
- Ensure compliance with Oklahoma alcohol licensing and responsible alcohol service standards.
- Lead emergency and business continuity planning, including severe weather preparedness.
- Represent Food & Beverage with the General Manager and executive team on property-wide initiatives.
WHAT YOU BRING (QUALIFICATIONS & EXPERIENCE)
- 3+ years as a Director of Food & Beverage or equivalent multi-outlet leader in high-volume casino, resort, arena, or entertainment operations.
- Bachelor’s degree in Hospitality Management, Business, or a related field, or equivalent experience.
- Proven success leading large teams, improving engagement, reducing turnover, and building strong teams.
- Proven record of improving food and beverage quality while enhancing hospitality.
- Ability to balance premium experience with value for a diverse guest base.
- Financial expertise in budgeting, cost controls, inventory, labor productivity, and P&L management.
- Beverage program leadership, including licensing compliance and responsible service.
- Current food protection manager certification, or ability to obtain on hire.
- Ability to obtain required Oklahoma gaming or alcohol licensing.
Preferred Qualifications
- Casino, tribal gaming, or integrated resort experience.
- Live entertainment or concert venue F&B experience.
- Contracted or third-party operator experience.
- Experience stabilizing an operation and rebuilding leadership teams.

WORK ENVIRONMENT & TRAVEL
- This is an onsite role based in Thackerville, OK
- You will work a non traditional schedule that may include nights, weekends, and holidays
