The Role

As Sommelier, you will play a key role in delivering an exceptional wine and beverage experience at Nobu Melbourne, working alongside a passionate hospitality team to create unforgettable dining experiences for local and international guests.

You will be responsible for curating memorable beverage journeys, driving wine and beverage sales, supporting team development and fostering a strong beverage culture throughout the venue. Working closely with restaurant leadership and Crown's wine team, you will help elevate the guest experience while contributing to the commercial success of one of Melbourne's premier dining destinations.

In this role you will:

• Deliver exceptional wine and beverage service, creating memorable experiences for every guest.
• Provide expert recommendations on wines, sake and premium beverages that complement Nobu's renowned cuisine.
• Drive beverage sales through effective guest engagement and service excellence.
• Support the execution of beverage promotions, initiatives and revenue-driving strategies.
• Assist with beverage inventory management, stock control and ordering processes.
• Maintain accurate beverage records and support cost-control initiatives.
• Train, coach and mentor team members to build beverage knowledge and confidence.
• Foster a strong beverage culture within the venue, helping create beverage champions across the team.
• Ensure compliance with all responsible service, licensing and company standards.

About You:

You are a passionate Sommelier who enjoys sharing knowledge and creating exceptional guest experiences.

You bring professionalism, confidence and a genuine enthusiasm for premium wine and beverage service. Your strong communication skills and guest-focused approach allow you to connect with guests and elevate every dining occasion.

• Demonstrated experience as a Sommelier role within a premium hospitality environment.
• Strong wine knowledge with a passion for continuous learning and professional development.
• WSET qualification or equivalent beverage certification will be highly regarded.
• Proven ability to influence beverage sales and contribute to commercial outcomes.
• Experience training and developing team members in wine and beverage service.
• Strong communication and relationship-building skills.
• Excellent attention to detail and organisational capability.
• A genuine passion for hospitality and creating memorable guest experiences.
• Experience within luxury hotels, premium restaurants or fine dining environments will be highly regarded.
