Job Summary:

The Wisconsin Union is seeking a Culinary Support Manager to play a leadership role in the daily management and smooth operation of our high-volume production kitchen located in the Memorial Union. Reporting to the Associate Executive Chef, this position will manage and develop kitchen staff, coordinate daily food production, order and receive product, plan menus, and ensure we consistently deliver exceptional customer service and high-quality culinary products. You will be instrumental in fostering a productive team environment and upholding our standards for safety and quality. In this role you will:

  • Plan, lead, and coordinate daily food production activities to maximize efficiency and ensure the consistent delivery of high-quality product.
  • Lead and direct the implementation of best practices for kitchen organization, safety, efficiency, and established operating procedures.
  • Order and receive product.
  • Develop and plan menus.
  • Manage full-time cooks and student workers in both the kitchen and dish room.
  • Support our catering and retail/restaurant teams.

Ability to lift and carry 40 pounds occasionally needed; Ability to work in hot or cold temperatures

Work Schedule and Location:

This position is scheduled to work our kitchen AM shift; Monday through Friday 6 AM to 2 PM, with a rotating Saturday shift. This position will also occasionally work on Sundays as needed. Special Event Weekends such as Football Weekends, Homecoming, Labor Day and Commencement are part of the schedule. Start times and schedule may vary based on business needs.

Key Job Responsibilities:

  • Selects, develops, implements and schedules logistics and menus for daily and catering operations
  • Leads and provides exceptional customer service, answers questions, and provides information regarding food preparation, catering, and associated activities
  • Monitors adherence to federal, state, campus, and local food safety regulations, policies, and procedures, identifies needs and makes recommendations for improvement to leadership
  • Oversees the dish room
  • Develops, implements and oversees workflow components, and assigns and coordinates the day-to-day activities of food service staff
  • Assists with unit budget monitoring, management of inventory levels, and staff training

The expected starting salary is $57,500 / Annually

Required Qualifications:

  • 3 years of progressive experience overseeing a high-volume production operation

  • 1 year as a lead or supervisor in a multi-department kitchen

Preferred Qualifications:

  • Experience ordering product for high-volume kitchen production

Certifications:

ServSafe Certification Required: Hold or able to obtain within 3 months of hire
