Crown Perth is seeking an experienced Sous Chef to provide strong operational leadership within one of our dynamic food and beverage venues. Supporting the Chef de Cuisine, you will oversee daily kitchen operations, lead and develop a diverse culinary team, and ensure every service delivers exceptional food quality and guest experiences.

What you’ll be doing

• Lead daily kitchen operations, ensuring food quality, presentation and service consistently meet Crown’s standards.
• Coach, mentor and develop the culinary team, building capability, engagement and clear succession pathways.
• Manage rosters, labour requirements, productivity and operational costs to support financial performance.
• Maintain strong food safety, workplace safety, compliance and risk-management practices across the kitchen.
• Partner with the Chef de Cuisine and broader Food and Beverage leadership team to deliver venue objectives and outstanding guest experiences.

About you

• An established Sous Chef or senior kitchen leader with demonstrated experience managing a large, high-volume operation.
• Strong people leadership skills, with the ability to motivate, develop and hold a diverse team accountable.
• Proven commercial acumen, including experience with labour management, budgets, operating expenses and P&L performance.
• Excellent communication, organisation and problem-solving skills, with the confidence to lead demanding services.
• A completed commercial cookery apprenticeship or equivalent qualification, supported by strong food safety knowledge.

• Demonstrated leadership experience within a premium, high-volume buffet environment, combined with strong hands-on culinary capability, will be highly regarded.
