REPORTS TO: Sous Chef / Chef
CLASSIFICATION: Full-Time/ Seasonal / Hourly

POSITION

The Cook II is responsible for preparing, cooking, and seasoning menu items in a timely manner while maintaining established food quality and production standards. The Cook II performs mise-en-place in sufficient quantities for the day's expected business levels and assists the Sous Chef and Chef with the preparation and presentation of daily menus, including specials, soups, stews, and chilies.

The Cook II also assists with food service operations during peak business periods by preparing and replenishing food items, maintaining adequate stock at service stations, assisting servers with limited food service support activities, and helping ensure efficient guest service.

SPECIFIC JOB REQUIREMENTS

  • Minimum of 1 year of cook and kitchen experience is required.

  • Ability to prepare, cook, and season food in accordance with established recipes, production standards, and menu specifications.

  • Ability to work efficiently in a fast-paced kitchen environment and complete assigned food preparation and service duties in a timely manner.

  • Ability to stand for extended periods of time and lift up to 40 lbs.

  • Willingness to work flexible schedules that may include nights, weekends, and holidays.

  • Ability to follow verbal and written instructions and communicate effectively with kitchen staff, supervisors, and servers.

  • Ability to properly operate kitchen equipment and safely use knives and other kitchen tools.

  • Ability to maintain a clean, organized, and sanitary work environment.

  • Ability to obtain and maintain current, valid state-required licenses and/or certifications, such as a Food Handler's Permit and Sips and Tips certification, as applicable.

  • Post-hire background check required.

  • On-the-job training is provided; employer will train.

JOB DUTIES AND RESPONSIBILITIES

FOOD PREPARATION AND PRODUCTION

  • Prepare, cook, and season dishes in a timely manner while maintaining established quality and production standards.

  • Perform mise-en-place in sufficient quantities to meet the day's expected business levels.

  • Assist the Sous Chef and Chef with preparation and presentation of daily menus, including specials, soups, stews, and chilies.

  • Prepare and replenish cooked food items for service lines and warming stations to ensure food remains available for guests.

  • Portion prepared food into appropriate serving containers and maintain adequate stock levels at food service stations.

  • Package completed food orders and place them in designated pickup areas for guests.

GUEST SERVICE SUPPORT

  • Assist servers during peak business periods to help maintain efficient guest service and reduce wait times.

  • Assist with restocking and service of food selections at stations where lines develop during peak business hours.

  • Communicate with servers regarding food availability, preparation times, and replenishment needs.

  • Restock ingredients, condiments, utensils, and disposable service items used in food preparation and guest service areas.

SAFETY, CLEANLINESS, AND FOOD STORAGE

  • Demonstrate proper operation of kitchen equipment and safe use of knives and other kitchen tools.

  • Work cooperatively with stewards and other kitchen personnel.

  • Keep work and service areas clean, organized, and uncluttered, including walk-in coolers.

  • Observe proper food storage and rotation procedures to ensure freshness and minimize waste.

  • Label and properly store leftover food products in designated cooler or kitchen areas.

  • Perform daily food inventories before the end of each shift.

  • Follow established food safety, sanitation, and workplace safety procedures.

  • Report any work-related injury requiring medical attention to the appropriate supervisor.
